A classic homemade butter chicken recipe featuring tender chicken marinated in yogurt and spices, then simmered in a rich, creamy tomato-based sauce. Perfect for a cozy dinner.
1. Chop chicken into cubes and combine all the marinade ingredients. Let marinate for at least 30 minutes or overnight in the fridge.
2. Heat oil in a pan on medium heat. Add in the marinated chicken. Cook for 2-3 minutes each side. Remove from pan and set aside.
3. Add butter and onions into pan. Simmer for a couple minutes. Add garlic, ginger, cumin, and garam masala. Sauté for a couple minutes.
4. Add crushed tomatoes, chili powder, and salt. Mix well. Remove from heat and blend (cool first) or use an emulsion blender if available.
5. Add sauce back to pan. Add in heavy cream and sugar. Mix well. Add chicken back in and cook for 5-8 minutes in the sauce or until cooked through.
6. Garnish with cilantro. Serve with coconut rice and naan bread. Enjoy!
