Cajun Chicken Pasta

1. Mince your garlic and small dice your onion and red pepper. Set aside.
2. Cut your sausage into bite-size pieces. Prepare your chicken by cutting each in half to make thin cutlets. Oil and season each breast.
3. Cook your chicken for a few minutes on each side until cooked through. Meanwhile, begin cooking your choice of pasta.
4. Remove chicken and brown the sausage. Remove the sausage and add the onion, red pepper, and garlic.
5. Cook down the veggies until soft. Add the tomato paste and mix together. Add the cream and bring to a simmer.
6. Season the sauce. Then add grape tomatoes, spinach, and parmesan.
7. Add in pasta, sausage, and chicken and mix until incorporated. Top with fresh lemon, parsley, and more parmesan. Enjoy!
